Cinder NOLA

Origin · New Orleans

We didn’t open a restaurant.

We put an oven on a truck and chased the nights people already show up for.

New Orleans nightlife — crowded street at night

The name

Cinder

Named for what’s left when the fire does its job: heat, flavor, a little ash on the crust edge. The truck is small on purpose. The menu is short on purpose. The oven is not a toy.

Dough ferments cold for days. Sauce is simple. Cheese is chosen for melt, not Instagram stretch. If the wood isn’t right, we wait. If the lot’s dead, we learn and move.

Fresh mozzarella, tomatoes, basil, garlic, olive oil
Fresh ingredients — sauce simple, cheese for melt
Cold-fermented dough ball on a floured counter
Dough — cold ferment, hot finish
Hardwood stacked for the fire
Wood — if it isn’t right, we wait

How we run

Follow the heat.

Check where we’re parked — or book the truck for a private fire.
